With summer tomatoes, cucumbers and onions in abundance at local farmers markets, gardens and grocers, now is a perfect time to make a delicious, simple and healthy Greek salad. In just moments, you can enjoy a mouth watering side dish or main dish for yourself, family and/ or close friends.
Ingredients:
- Tomatoes (3-5)
- cucumber (1)
- onion (1/2 -1)
- olive oil
- sea salt
- black pepper
- oregano
Simply cut up veggies, with tomatoes comprising majority of vegetable used, followed by cucumber and onions. Dress with olive oil, sea salt, pepper and oregano to taste. Serve and enjoy. Leftovers last several days in refrigerator.
