Home made, gluten free organic apple pie

January 2015 025I rarely make home made apple pie, but I am moved to do so on Thanksgiving and other special occasions. I use a recipe very close to my mother’s recipe which serves as a nice reminder of my mom, whose sweet memory I carry with me. I use less sugar than the original recipe and play with the crust, using a gluten- free crust which seems to vary a bit each year. I usually serve it warmed with home made vanilla ice cream. Delicous Real, Raw Vanilla Ice Cream

 

 

vanilla ice cream in freezer containerIce cream is loved the world over for its sweetness and creamy, cool taste.  Vanilla ice cream is a favorite dessert in our home. We enjoy it alone or occasionally combined with other sweets like warmed home made apple pie or gluten free brownies for an extra decadent treat. If I am in the mood for chocolate, I may add raw organic chocolate syrup to my ice cream. (Wilderness Family Naturals has a chocolate syrup with the cacao left intact.) Raw cacao is extremely high in anti-oxidants. Occasional desserts as part of a well balanced diet are acceptable and can be enjoyed on special occasions.

Ice cream made with real, nutrient dense ingredients is probably one of the healthiest sweets around. Continue reading

Simple, delicious crock pot pastured chicken and soup recipe

October 2014 photos 028Coming home to the delicious aromas of food cooking in my crock pot is a treat. The added bonus is the simplicity and time saved by using my slow cooker. Plus, slow cooking is an excellent way to preserve the nutrients of  foods. When food is cooked on high heat, toxins are created and food becomes less healthy. This recipe is so simple, it almost does not seem like a recipe. There are only 5 ingredients.  Continue reading

Spicy Pakistani Spinach Potatoes

Summer 2014 471Years ago my good friend Shane taught me how to make this dish at her home. She estimated her ingredients when she cooked, but tried to help me measure the portions. Shane is an excellent cook and I had the pleasure of enjoying many of her home cooked foods over the years. Shane’s spinach potato dish became a family favorite and many friends have enjoyed this side dish, as well. My children used to refer to the dish as Shane’s potatoes and would often request that I make it. You may adjust the ingredients and spices as desired. I tend to use more spinach and less potatoes. As many traditional recipes do, this recipe uses many healthy spices such as cumin seeds, tumeric, sea salt and crushed red pepper. Continue reading

Traditional, Gluten Free Pasta Con Broccoli

Summer 2014 437I once avoided pasta with rich cream sauces due to my misinformed fear of healthy fats. Now I embrace these foods made with traditional fats.  I use the best ingredients I can find and usually serve with a fresh garden salad and baked wild salmon. Pasta is high in carbohydrates, which can convert to sugar and fat, but the fat in the cream and butter helps to balance this out. By serving with a protein like salmon, the meal becomes balanced and healthy. Try and find tomato sauce or paste in a glass jar to avoid the leaching of chemicals in cans caused by the acid of tomatoes. Continue reading

Delicious, Simple Seasoned Salmon

seasoned salmonWild salmon offers many health benefits including omega 3 rich fats healthy for the heart and body. It provides protein rich with amino acids good for mental health.

One of my favorite fool proof recipes is baked salmon seasoned with organic butter, sea salt, black pepper, thyme and lots of basil. I make this weekly due to its simplicity, health benefits and delicious taste. It goes well with a variety of side dishes including soups, salads, vegetables and pasta. Continue reading

Easy, raw breakfast smoothie

January 2015 231This is one of my favorite smoothie recipes. I make it frequently when I am in a hurry and take it to go for breakfast, eating in the car. I know it is better to enjoy and eat food slowly, but when in a rush this smoothie provides nutritious fats, protein and vitamins to start my day. Delicious, Easy, Gluten Free, Vegetarian Lasagna Recipe

Vegetarian LasagnaThis recipe is gluten free and uses sheep cheese instead of cow’s cheese, for those sensitive to cow’s dairy. I found the cheese at Whole Foods and used Tinkyada lasagna noodles.  I have tried several vegetarian lasagna recipes over the years, but this is our family’s favorite and by far the easiest one to make. If cow’s dairy is not a problem, parmesan cheese can be used instead of the Manchego cheese and Mozzarella cheese for the topping. It is delicious and can be doubled to serve a larger group (using standard size lasagna pan). I have served it at Super Bowl parties in the past and it was well received.  Serves 4-6. Delicious Blueberry Muffins (gluten free, dairy free, egg free/or regular)

My one daughter is temporarily on a gluten free, dairy free, egg free diet,  so we have been experimenting with recipes. We tried these recently and they were a huge success. Only thing we would change is to add more blueberries next time.  Bake and enjoy if you like blueberries. We tried to use the best possible ingredients. (With no dietary restrictions, use organic whole milk, pastured butter and one pastured egg instead of applesauce; also with a wheat flour, there is no need for xanthun gum). Yield: 12 muffins. Chocolate Chip Mint Meringue Cookies

 

186I have fond memories of large Passover seders at my in law’s home in Kentucky when my children were young. It was a chance for my husband’s family to gather from around the country to celebrate this religious holiday and also have an informal family reunion. Our children loved playing with their cousins in the large, perfect sprawling yard with a creek running in the back, tire swings and swing set.  My mother in law was a fabulous cook.
